2/3 Cup
Granulated Sugar
1 Cup
Baking Powder
1/2 Teaspoon
Cinnamon powder
1/8 Teaspoon
1 Pinch
8 Tablespoons
Pineapple, diced into small pieces
1.5 Cups
Vanilla Essence
1/2 Teaspoon
Lemon rind
1/4 Teaspoon
Whipped cream ( optional)
1 Cup
Grated Pineapple ( optional)

  1. Pre heat oven to 350F. Prepare a 9inch pan and keep aside.
  2. In a non stick fry pan, melt 2 tablespoons of butter on low flame. Add the diced pineapple. Let it cook for about 10 -15 mins.
  3. In a small bowl sift flour, baking powder, cinnamon powder and salt.
  4. Break the eggs into a large bowl and beat until light and fluffy.
  5. Add in the butter, sugar, lemon rind and Vanilla Essence. Beat for about 5 minutes.
  6. Add the flour, salt, baking powder and cinnamon powder mix couple of spoons at a times until all of it is incorporated to make a thick batter.
  7. Fold in the cooked pineapple butter mix into the batter.
  8. Pour into prepared cake tin and bake for 25-30mins.
  9. Serve with a topping of whipped cream and crushed pineapple.
